HOW TO USE
1.Take the MS screw and put it through drainage holes, making sure the screw head fits into the dritted on the underside of drainage holes. (Assemble both sides at once)
2. Place one of your MS spacers on the screw.
3.Take the MS bolt and screw it onto the MS screw, sandwiching drainage holes. Make sure the bolt is fairy tight.
4. Place the top piece over the screw.
5. Place the MS spacer on the screw.
6.Screw on the finger tightner.
7. Finish with the top bolt.

This press is easy to clean. It presses tofu slowly over time. The drip tray is very convenient. I can tighten the screws, walk away, wander back, tighten it further. The longer I let it press, the better the tofu texture. You can sit cans and such on top of it if you’re too busy to keep tightening the screws. The top is very flat.
I have gotten some very thick tofu out of this press. Things I have not been able to achieve with plates and weights. If you are willing to put in the time, you will get some very satisfying textures out of this press.

Ease of use: Assembly easy. Effectively rid a 3″ high brick of tofu of several ounces of liquid. Both cooks used some of that liquid in the rest of the meal prepared.
Attractive: Made of bamboo, so a warmer look than plastic. Looks nice on the counter.
Cleaning issues: None. Just needs to dry sufficiently so the bamboo isn’t put away too damp. Neither user disassembles entire unit after each use.
